6 medium size white potatoes ,peeled


Water
1 cup mayonnaise or salad dressing
1 tablespoon vinegar
1teaspoon salt
1/2 teaspoon of celery seeds
1/4 teaspoon ground pepper
2 medium size ribs celery,chopped
1 medium-size oninon chopped
1 medium size bell pepper,chopped
Optional garnish:lettuce leaves
Place potatoes in Dutch overn or kettle with 2 inches cold water, Bring to boil:reduce heat. Simmer until tender but still firmabout 25 minutes. Meanwhile, in large bowl.combine mayo , vinegar,salt,celery seed and
pepper: stir. Drain potatoes; when cool ,cube or slice . To dressin add potoatoes,celery, onion and bell pepper. Lightly stir to mix and coat. Line salad bowl or platter with lettuce leaves; top with potato salad.

2 Tablespoon honey
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 tsp ground white pepper
2 Tablespoon Canola oil
1 cantaloupe,seeded and cubed
1 pineapple cored and cubed
1 cup blueberries
4 medium nectarines
Preparation
1. In a small bowl, whisk together lemon juice,honey,mustard,salt and pepper until blended
Add oil in a slow steady stream,whisking constantly until dressing thick and emulsified( you should have
a 1/4 cup)
2. Combine cantaloupe,pineapple,blueberries and nectarines in a large bowl. chill until ready to serve
Just before serving, toss fruit with dressing and stir gently to coat . Serve cold
